Here we travel the island of Barbados in search of the best souse on the island. So you don't have to be disappointed by poor tasting souse We will find the best for you. History of Pudding and Souse Pudding and souse as it is popularly known dates back to the era of slavery. According to Barbados folklore, the colonial masters would give the slaves the scraps from the pig… These scraps included the feet, the ears, and the intestines. Eager to take part in the delicious meat the slaves took these unwanted parts of the pig and created a delicacy that is enjoyed to this day in homes, restaurants, and hotels across the island. Bajan Pudding and souse is made with different parts of a pig, it’s the best meal you can get in Barbados on weekends. The souse is essentially pickled pork and the pudding is steamed sweet potato with chunks of breadfruit. Caribbean black pudding (steamed sweet potato) is the name I like to give to this meal because all my friends from different islands in the Caribbean eat it.
