Butter scotch cake
Delicious cake with butter scotch sauce
This video explain how to make butter scotch cake without oven.For this cake first we have to prepare butter scotch sauce
INGREDIENTS FOR THE BUTTER SCOTCH SAUCE
Granulated sugar - 1/2 cup
Butter - 50 gm
Hot milk - 1/2 cup
Heat the sugar in a pan .(no need to stir now , it will start to caramelize its own ) when it start to change in color stir until all the sugar completely caramelized
Simmer the flame,add butter stir well
Once the butter incorporated slowly add the hot milk by stirring continuously, heat 2-3 minutes until it gets sauce consistency without any crystels
Off the flame and allow to cool down
FOR THE CAKE
Unsalted butter - 75 gm , at room temperature
Powdered sugar - 1 cup
Eggs - 4 , at room temperature
All purpose flour - 1.1/2 cup
Baking powder - 1 tsp , leveled
Baking soda - 1/2 tsp
Chopped cashew nuts - 1/2 cup
All purpose flour - 1 tsp
METHOD
Sift the flour with baking powder and baking soda
Cream the butter with powdered sugar
Add the eggs , beat on medium speed around 4-5 minutes or until soft and fluffy
Add the prepared butter scotch sauce half at a time then beat for 1 or 2 minute on each addition
Add the sifted flour little at a time , then fold with a hand whisk
Mix cashew nuts with flour then add in the batter mix once again
Grease a deep bottomed sauce pan with butter , pour the batter to this , close the lid (make sure the lid has a vent hole)
Place the sauce pan on a simmering plate or a pan
Cook the cake on low flame about 1.1/4 hours or until the wooden skewer inserted on the center of the cake become clean.
After the cake cooked ,allow to cool down without lid then cut and serve
You can bake this butter scotch cake in oven
for this preheat the oven 180 c for 10 minute , line the pan with parchment paper , then pour the batter ,then bake around 50-60 minutes
Many ovens have different temperature , so the time mentioned above may vary according to the type of your oven
