Pointed gourd provincially known as Potol, is a seasonal vegetable available in summer till monsoon. It is cultivated and consumed in every part of West Bengal and Bangladesh. Bengali cuisine has many amazing Niramish (Vegetarian) dishes. This is one of 'em. It takes minimum effort and ingredients, but tastes surprisingly delicious. The curry is delicate, creamy. It's simplicity makes it unique. For good Dudh Potol, 3 things that we have to keep in mind are- 1. We've to use Kochi (Small, with soft seeds) Potol. And we've to peel them completely. This will help in Osmosis and the Potol will soak up the gravy, and burst in your mouth. 2. Consistency of the gravy. 3. Right balance of নুন-মিষ্টি-ঝাল (saltyness-sweetness-spiciness). . .
