مقادير السمكة الحرة:
1 سمكة كبيرة (3 كيلو) النوع الذي تفضلونه
3 او 4 ملاعق صغيرة ملح
نصف ملعقة صغيرة فلفل اسود
نصف ملعقة صغيرة فلفل احمر حار
1 ملعقة صغيرة ثوم بودرة
1 ملعقة صغيرة بابريكا
1 ملعقة صغيرة ونصف كمون
1/2 كوب زيت زيتون
1 بصلة مقطعة لوضعها في جوف السمكة
مقادير الصلصة:
1/4 كوب زيت زيتون
1 كوب (125 غرام) بصل مفروم
8 فصوص ثوم مهروسين مع 1/2 ملعقة صغيرة ملح
1 فلفل اخضر حار مفروم (ممكن اكثر حسب الرغبة)
1 باقة كزبرة خضراء مفرومة
1 كيلو بندورة ( طماطم) مقشرة ومفرومة
1 ملعقة صغيرة ملح
1/4 كوب رب البندورة (معجون الطماطم)
1 كوب ماء
2 ملعقة طعام عصير الليمون الحامض.
حرارة الفرن: 200 درجة C او 400 درجة F
للتزيين : شرائح ليمون حامض _ كزبرة خضراء _ صنوبر محمص.
Spicy Lebanese fish ingredients:
1 large whole fish (3 kilo or 6.5 pounds) (any kind (I used kampachi)
3 to 4 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper
1 tsp garlic powder
1 tsp paprika
1 1/2 tsp cumin
1/2 cup olive oil
1 whole medium onion cut into 6 pieces to stuff the internal cavity of the fish.
Fish sauce ingredients:
1/4 cup extra virgin olive oil
1 cup (125g) finely chopped onion
8 cloves minced garlic + 1/2 tsp salt
1 jalapeno pepper, finely chopped or more if
desired
1 bunch cilantro, finely chopped
1 kilo (2 pounds) peeled and finely chopped tomatoes
1/4 cup tomato paste
1 cup water
2 tbsp lemon juice
Bake the fish in 200 degrees C or 400 degrees F oven for 1 hour covered, then broil for 10 minutes uncovered.
For garnish: sliced lemon, cilantro and roasted pine nuts.
