Turkish Pide is my favourite Brunch/Lunch food. It combines melted cheese, toppings and a delicious crust into a satisfyingly DELICIOUS meal. You can get your name in the video credits as well as some behind the scene updates https://www.patreon.com/MiddleEats ___ 🌍 Stay connected 🌍 You can reach us on instagram or facebook, and we'd love to see any recipes you cook. ➥Instagram https://www.instagram.com/middleeatsyt/ ➥Facebook https://www.facebook.com/MiddleEatsyt/ ___ Sources: Turkish Food Travel - How To Make Turkish Pide (With Vegetarian Options) /watch/oDrGmjmMZ_aMG My Lahmacun recipe /watch/wWgH0e0B9bdBH __ 🍳 My Kitchen Equipment 🥘 (These links are amazon affiliated and help support the channel at no extra cost to you) Ooni Pizza Oven: https://geni.us/SIhAL Borner Mandolin: https://geni.us/BPzBw Microplane grater: https://geni.us/qzqTzve OXO Kitchen Scissors: https://geni.us/ihA8Wq Box Grater: https://geni.us/d4YE Food Processor: https://geni.us/2qQ9bX Smaller food processor: https://geni.us/gtPJ33 My Kitchen Scale: https://geni.us/o3tM Vegetable Peeler: https://geni.us/tiNom Citrus Juicer: https://geni.us/8xWwcBB Stainless Steel Cookware: https://geni.us/EsaLACR Utensils: https://geni.us/Da55Vjd Glass jugs: https://geni.us/QAuvNNB Stick blender: https://geni.us/E2FNym 📷 My Filming Equipment 🎥 Sony a6400: https://geni.us/Cc7J0Nj Sony F1.8 Lens: https://geni.us/5ATix6 Music by Epidemic Sounds - Referral link for a free trial here https://www.epidemicsound.com/referral/zpsg6n/ ___ 0:00 Intro 0:31 The perfect Pide Dough 3:24 Choosing your toppings 4:19 Assembling the Pide 6:20 Cooking pide in a home oven 7:04 Cooking pide in a pizza oven 8:18 Taste test and review ___ Dough ingredients for home oven: (Makes 8 Pide) 500g All purpose or Bread flour 180g Water 180g Whole Milk (Can be replaced with more water) 1 Tsp (4g) Dried Active Yeast 1 Tsp (7.5g) Salt 1 Tsp (5g) Sugar For the Pizza oven, reduce the liquids to: 150g Water 150g Whole Milk Also works great with only water Toppings: Cheese (I used Kasar and Kashkaval) Sucuk Pastirma Eggs Tomatoes Chillies Spinach Feta Cheese For the meat topping, check out the lahmacun video linked above Dough Directions: 1- Add the water and milk to a jug and heat to between 25-35c 2- Add the yeast and sugar and stir well, then let sit for 10 minutes 3- In the bowl of your stand mixer, add the flour and salt and combine them 4- Make a well in the flour, and pour in the yeasty liquid 5- Using the dough hook attachment, combine the liquid and flour on low speed until the liquid is absorbed 6- Knead for 5-7 minutes on Medium speed until the dough is soft, smooth and elastic 7- Divide the dough into 6-8 portions, and roll into dough balls 8- Line a tray with greaseproof paper, then flour it, and place the dough balls ontop 9- Flour the top of the dough balls then cover with a kitchen towel and let them rise for 30-40 minutes To assemble the Pide: 1- Flour your worksurface, then place a ball of dough in the center 2- Flatten it to knock out any gas, then shape it into a rough circle shape 3- Using a rolling pin, and your hand to hold the dough in place, roll it into an oval shape 4- Place the oval onto a piece of grease proof paper (if you don't have a pizza peel) 5- Place your cheese along the center of the pide, then add on your other toppings 6- Fold the sides of the pide over the cheese and filling, then pinch the two edges together to form the corners To cook in a home oven: 1- Place an oven tray upside down at the base of your oven, and another upside down at the top of your oven near the grill/broiler 2- Preheat the oven to its hottest temperature for at least half an hour 3- Use a cutting board or a cake lifter, to slide the pide WITH its grease proof paper onto the lower oven tray 4- Let this bake here until the bottom has browned and the edges have started to go golden (4 minutes in my oven) 5- Remove it from the oven, the brush the crusts with some butter 6- Place this back in the oven, this time at the top, for about 2 minutes until it is sufficiently browned To cook in a pizza oven: 1- Preheat your oven to about 400c 2- Slide your pizza into the oven using your peel 3- Cook for 20 seconds, and when the side closest to the heat goes vertical, remove it from the oven and rotate 180 degrees 4- Put this back in the oven for 20 more seconds till the second side goes vertical 5- Rotate once more and cook for 20 seconds further 6- Optionally brush with butter and place back in for 5 seconds
